Fast Fix Friday: Thai Peanut Chicken & Coconut Rice

This has become one of our weekly meals, as of late. LOVE IT!  It's so fast. I got it from Recipe Zaar.






Thai Peanut Chicken 

1/2 C creamy peanut butter
1/3 C honey
1/4 C soy sauce
2 tbls curry powder
2 cloves garlic, minced
1-1 1/2 1b boneless skinless chicken

Blend peanut butter with honey and soy sauce until smooth.
Stir in curry powder and garlic, blend well.
Place chicken in a large ziploc bag and pour peanut mixture over chicken. 
Chill 2 hrs (I rarely chill it for this long. Sometimes we just brush the mixture on while grilling)
Broil or grill chicken over medium heat, 4-6 inches from heat.
15-30 minutes, depending on the amount of chicken.


Coconut Rice

1 can coconut milk
1 can water
1 can rice
Pour into rice cooker (or pan, however you cook your rice)and cook until water is absorbed and rice is sticky.

Done & delish!

Question: Do you use the coconut milk can to measure out the water and rice or is it suppose to be 1 cup of each?
